Methocel (methylcellulose) is purified cellulose. To be used in food applications where a thickener, stabiliser, or dispersant is required. Methocel dissolves in cold water and gels in hot water. It has the unique ability to form a gel when heated above 45ºC which will then return to a liquid state upon cooling (approx 15ºC). Perfect for creating hot gels which melt in the mouth.
It can also be used to make clear, solid and flexible films which are produced by allowing a Methocel solution to dry out at a low temperature, this prevents the solution from gelling. Other applications include emulsification and suspension. Suitable for Vegans & Vegetarians, Non-GMO, Gluten Free.

How to use: Dosage Rates: 0.5% - 5.0% depending on application. Methocel dissolves in cold water and gels in hot water, preparing a solution of Methocel cannot be done with just cold water., which will cause the solution to disperse unevenly and a lumpy mixture. The best method to use Methocel is to add to hot water of approx 70ºC, then add twice the amount of cold water to the solution. This will bring the temperature of the solution down and the Methocel will dissolve.
For example, if your recipe uses 900ml of water, add the Methocel to 300ml of hot water at approx 70ºC then add 600ml of cold water. Refrigerate for approx 3 hours to ensure all particles are dissolved before using. Hot gels using Methocel may sometimes be subject to a small amount of leaching, this can be controlled by adding Xanthan Gum to help bind the water and solution.
Storage Conditions: Store in dry, cool conditions and not in direct sunlight. Use within 6 months of opening.
